Pumpkin
is one of my favorite flavors of the fall season. And what better way
to enjoy pumpkin than with a healthy protein muffin recipe?
When
it comes to nutrition, pumpkin is a pretty healthy vegetable to include
your diet. The meat of a pumpkin is high in Vitamin A and rich in
flavonoid poly-phenolic antioxidants like leutin, xanthin, and
carotenes.
Pumpkin is also low in
calories, contains no fat, and is super high in fiber. Fiber is an
incredibly important ingredient to get more of on any weight loss plan.
Not only does it keep you feeling full because it expands in your
stomach, it also burns more calories during digestion, so it’s a great
boost to your metabolism.
